Firebirds Wood Fired Grill

Firebirds Wood Fired Grill introduced a taste of Colorado to the Carolinas when it first opened its doors in Charlotte, North Carolina in December of 2000. The restaurant is the creative concept of owner and restaurateur, Dennis Thompson, who regularly travels out west. He fell in love with the feel of the area as well as the food. Drawing from those experiences, he developed Firebirds.


The exposed kitchen showcases a flurry of activity, while smoky aromas from the hardwood flames infuse the restaurant. “Grilling over the open flame gives all of our food a tremendous flavor,” says Thompson. “Our blend of bold seasonings, spices and sauces is designed to create an innovative style of American cuisine that makes each dish flavorful from beginning to end,” he adds. Guests can expect well seasoned steaks, ice cold martinis and much more. Additional favorites include herb roasted prime rib, fresh seafood, hearty pasta, awesome burgers and oversized salads.

The Grind

“The Grind, headed up by chef Matt McLinn (his Valley credentials include Christopher’s Fermier, and his own Méthode Bistro and BLT Steak), serves up a compact menu of burgers and other dishes cooked in unique coal-fired ovens. From the mouthwatering sweet and spicy burger, topper with combination of candied jalapenos and fried ratatouille, pungent roasted garlic aioli, and a heap of fresh watercress, to a peppercorn-crusted version, there’s plenty to satisfy carnivores, although there are a few meat-free treats as well, including a hefty portobello burger, salads, roasted vegetables, and sweet potato fritters. Coal-fired ovens have been used in Europe for hundreds of years. While, it’s a relatively new concept in the United States, it’s been the preferred technology for decades in countries like Spain, France, England and Italy.


The Grind is the first restaurant in the United States to utilize custom coal-fired ovens that cook at over 1,000 degrees. The ovens come with two adjustable broiler racks that allow Chef McLinn to cook a wide variety of meats and vegetables in the oven simultaneously; making this a versatile piece of equipment, capable of very high production.


Traditional gas ovens cook at 550 degrees, wood ovens around 650 degrees. Only coal can get an oven this hot. Most items cook in approximately four minutes and the high heat allows Chef McLinn to create a flavorful crust while sealing in the juicy tenderness in all of our products. The smoke imparts flavor and the end result is the most tender, juicy piece of meat, you’ll ever taste!

Gluten Free Creations

This is our original location, opened in 2003. We offer over 150 items, including the popular “Winkies,” which are a gluten-free version of a Hostess Twinkies filled with non-dairy crème. All items are free of wheat and gluten, and many of them free of other food allergies such dairy, eggs, corn, soy or nuts. Peanuts are not used in this facility.


Our retail area has been abbreviated to allow room for our bakers to expand the wholesale and retail side of the business.


Even though you may not see all the items in the freezer retail section, please know they are available to you. Simply ask.


Basic cakes are available at this location for you to purchase and decorate and inscribe as you desire.

Trader Vic’s

The legend returns. A Polynesian classic is reborn with Valley Ho flair at Scottsdale’s downtown landmark. Trader Vic’s at Hotel Valley Ho features Polynesian fare and big tropical drinks with a unique modern island design that includes traditional tikis and outrigger canoes, but also adds new architectural elements such as floor to ceiling glass walls and curved walls to create a sense of fluid island life.


Chefs here employ a variety of cooking methods such as steaming, grilling using a wok and slowly roasting delicacies from the Chinese Wood Fired Oven. Pupu platters –offering an assortment of appetizers– and tidbits such as Barbeque Spare Ribs, Crab Rangoon and Crispy Prawns top off the finger foods. Other favorites come from the Wood Fired Oven and range from Rack of Lamb to Maple Leaf Duck Breast and Rib Eye Steaks. Along with traditional favorites, Trader Vic’s continues to add new specialties such as Hawaiian Ahi, Mahi Mahi and other fresh seafood.
